As a former chef and having cooked in a volume environment, you would best make it with a frozen veg blend and for the sauce, making it in a steam kettle vessel is best as it can boil and cook the curry, but is not harsh like a stove top cooking, and you can assemble it and ship or transport it in insulated containers to satellite kitchens or service areas, this is the fastest and most productive way to make it on a large scale.
One thing about this typ of preparation, health codes require the food be kept at 160 d F/ 80 d C for safety purposes, that is why insulated containers or warmers are best used.
